Friday Food: Iron Toasted Panini

This has to be something you only see in the movies.  People cooking with their clothes iron.  Making grilled cheese or some other type of sandwich by toasting it with the irons heat.  Well this is actually a really good recipe and a lot of fun to cook it this way and to be honest it might cook it the best.  Perfect recipe to start with and obviously able to tweak to your liking.  Great for something new to try and have a little fun doing it.

Perfect for hotel traveling and dorm room living as well.

Iron Toasted Panini

Serves 1
-1 Tbsp light mayo
-1 tsp Dijon mustard
-1/2 tsp. horseradish
-4-6 oz sourdough, French or whole-wheat    baguette, sliced open
-4 oz. thinly sliced deli roast beef
-1/2 avacado, sliced
-2 slices red onion
-2 slices tomato
-1-2 slices cheddar cheese
-Non stick cooking spray

Take a minute to remember the last time you used your clothes iron, then attempt to locate it. Heat it on the highest setting without steam. While it warms up, combine mayo, mustard and horseradish in a small bowl. Smear sauce on both halves of the bread, then pile on the roast beef, avocado, onion, tomato and cheese. Coat the outsides of the bread with nonstick cooking spray and place a sheet of foil on top of sandwich. Using the iron, firmly press down on sandwich for 2-3 minutes. Flip and repeat until cheese is melted.
